Today we would like to send our deepest condolence Today we would like to send our deepest condolences to Cynthia and all of the Tabb family as we remember Rex. Having retired from Rank Xerox, Rex came to join Bob and the team here at Evans of Monmouth where he worked for well over 10 very happy years. Rex was a huge part of our family business, he was a true gentleman in every way and was loved by everyone he came into contact with. Nothing was ever too much trouble for Rex and he always had a smile on his face….. we miss him dearly, especially Bob, as the pair of them would laugh and joke together for hours! Forever in our thoughts, rest in peace Rex xxxx

Sweet potato and black bean nachos - perfect for a Sweet potato and black bean nachos - perfect for a Friday Night Feast! Ingredients 750g sweet potatoes, sliced into 5mm rounds 1 tbsp olive oil 1 red onion, finely sliced 2 tbsp red wine vinegar 400g tin black beans, drained and rinsed 200g ready-made tomato salsa 75g tortilla chips 100g grated vegetarian cheddar 1 large ripe avocado, chopped Finely grated zest and juice 1 lime Handful fresh coriander Method Heat the oven to 220°C/200°C fan/gas 7. Toss the sweet potatoes in the oil on a roasting tray, season with salt and a grinding of black pepper, then bake for 30 minutes until caramelised and tender. Meanwhile, mix the red onion with the vinegar and a pinch of salt in a glass or ceramic bowl. Set aside to quick-pickle for 25 minutes. Heat the grill to high. Top the sweet potatoes with the black beans and tomato salsa. Crush the tortilla chips in a bowl and mix with the grated cheese, then sprinkle over the potatoes. Grill for 6-8 minutes until everything looks golden and bubbling. Toss the chopped avocado with the lime zest and juice, then scatter over the nachos with the fresh coriander and pickled red onion. Serve straightaway

Whip up this quick and healthy asparagus, pea and Whip up this quick and healthy asparagus, pea and egg salad and you'll get plenty of nutrients including vitamin C and iron, plus three of your 5-a-day. Ingredients 3 tbsp natural yogurt 1 tsp wholegrain mustard ½ tsp honey ½ lemon , zested and juiced 100g watercress 1 large slice sourdough bread 200g asparagus , tough ends removed 1 ½ tbsp cold-pressed rapeseed oil 2 eggs 200g frozen peas Method STEP 1 Heat oven to 220C/200C fan/gas 7. Mix the yogurt, mustard and honey together. Add the lemon zest, then add the juice and some seasoning to taste. Squeeze any remaining lemon juice over the watercress. STEP 2 Tear the bread into rough chunks and put them on a large roasting tray with the asparagus. Toss both in the rapeseed oil and seasoning, and roast for 10 mins until the asparagus is tender and croutons are golden. STEP 3 Meanwhile, cook the eggs in a pan of boiling water for 6 mins, then add the frozen peas and cook for 1 min more. Drain and rinse both under cold water until cool. Peel the eggs, then cut into quarters. STEP 4 To assemble, mix the asparagus and peas through the watercress, then toss through the creamy dressing. Nestle in the eggs and croutons, and serve. PERFECT for a warm day.

Robert George Evans founded the company 45 years ago. Evans of Monmouth is a small family run business based in the small market town of Monmouth, South Wales. Evans of Monmouth are proud to be the chosen supplier to the Hotel and Catering Industry within the counties and surrounding areas of Monmouthshire, Herefordshire & Gloucestershire.
